PEANUT BUTTER COOKIES
Peanut butter cookies are the epitome of comfort baking. With their warm, melt-in-your-mouth goodness, each bite takes you back to simpler times.

The simple joy of making them can turn a Wednesday evening into a delightful mess, especially when little hands get involved. Somehow the peanut butter on every surface can be found long after the final cookie has been snuck.​

While I love experimenting with variations like a good chocolate drizzle or some "these bananas are about to go bad" chopped bananas, the classic recipe always calls me back for more!

This recipe calls for honey instead of the usual vanilla, because....you guessed it, I didn't have vanilla in the house. Sometimes we have to work with what we have and this recipe proves that some substitutes holds up just as well!

Once all the ingredients were mixed and the peanut butter spoons were licked clean, the real fun began! Who needs the classic imprint on top when you have a couple budding artists and some cookie dough? The girls got creative, crafting their own unique designs, making the end result even sweeter and more memorable.

As a note, I would not recommend baking the cookies as they are shown below, as you'll end up with some cross between a cookie cake and a bunch of burnt sides. After the girls designed their cookies, I did some Mom magic and re-rolled and placed the non-decorated ones in a 3x4 layout, and tried my best to even out the edges of their cookies so they were a more uniformed shape.

TIPS:

Feel free to substitute vanilla at a 1:1 ratio with the honey. You can also use other sweeteners like syrup if you're feeling fancy.

Don't be afraid to add some mix-ins! Chocolate chips, banana, sprinkles, sugar on top. The sky is the limit with this peanut butter cookie, so have fun with it!
